Brian is a New England transplant currently living in South Carolina building a farm with his partner, Catherine. 42 Farm is home to both Articulate Equestrian, Catherine’s horse businesses, and Brian’s pepper garden and business, Bold Flavours.

Brian has always been a fan of spicy food from the time he was a baby eating jalapeno peppers. He started growing peppers in 2023, his second year in the Carolina’s. It began with 4 plants, where as in 2024 he is now tending to 100+ plants across a number of varieties.

Brian started Bold Flavours in 2024 to share his new found appreciate for peppers and gardening with others. Currently offering fresh organic pods, while working towards providing personally curated pepper flakes, powders, and seeds.

Understanding “Heat”

Capsaicin is the chemical within peppers that make them spicy. Up until 2006, the Habanero was the hottest pepper in the world. It was dethroned by the Ghost Pepper (Bhut Jolokia), and since there has been the Carolina Reaper and now the new Pepper X.

For the majority of people eating fresh peppers, a Serrano will be more heat than necessary. For those who enjoy spicy food, a fresh Habanero is plenty. Then there’s spice heads and those of us who aren’t as smart as we look, that’s where the super hots come in. The way I see it, anything beyond a Habanero is considered a super hot, though I think there needs to be a super-super hot category now.

Peppers in the Garden - 2024

In 2024 we expanded our initial year’s small batch to a pepper garden of over 100 plants across 15+ varieties. Each plant meticulously cared for with attention given to every single plant multiple times a day.

    Appearance: Red, wrinkly, with a bulbous top and a tail.

    Flavour: Fruity and floral with an extreme and intense heat.

    Appearance: Crinkled, light green and purple changing to a white milky color.

    Taste: Very floral with an extreme heat that dissipates somewhat quickly.

    Appearance: Orange, about 1-2" long, a bit more round.

    Flavor: Fruity, citrusy, with a good heat.

    Appearance: Cayenne like appearance, 3-5" long, skinny, turns red.

    Flavor: Tastes like a cayenne, a sharper heat that isn't too intense.

    Additional Info: This is an accidental cross from my garden last year. These were grown from seeds from a habanero that I grew, but it seems that it was accidentally crossed with a cayenne. I'm extremely curious and excited to see how this variety propagates in future generations.

    Appearance: 3-4" long, yellowish-green waxy outside.

    Flavor: Extremely mild heat, slight sweetness with a tang.

    Appearance: Bumpy and crinkly, starts dark purple and then ripens to a gorgeous mottled black/purple/orange/red.

    Appearance: Different appearance depending on the plant. Mostly round, small/medium balls, often with corking. Starting a dark olive green with a slight purple, ripening to red with a more floral lighter green.

    Appearance: 2-3" long, elongated round, very much like a jalapeño. Starts a gorgeous purple and light green, ripening to red.

    Flavor: Very juicy, flavor somewhat similar to a jalapeño, a good heat, a bit more than your normal jalapeño.

    Appearance: About 3" long, bumpy and stereotypical scorpion look. Ripens to a peach or peach/orange color.

    Appearance: 2-3" long, wrinkly, starts a very pale light green and purple, ripening to red.

    Flavor: Extremely spicy without much other flavour. Much spicier than expected.

    Appearance: Plant is a gorgeous variegated white/purple/green, with slightly odd shaped small pods, .5-1" long, starting purple and ripening to a bright red.

    Flavor: Good heat but not super intense. More of an ornamental plant. Better as flakes or powders than as fresh pods.
